Short Ribs

    Season and Brown

    Preheat oven to 325°F (160°C). Pat short ribs dry and season all over with 2 tsp kosher salt and 1 tsp black pepper. Heat 2 tbs neutral oil in a large Dutch oven over medium-high heat. Brown ribs in batches, 3–4 minutes per side, until deeply caramelized. Transfer browned ribs to a plate.

    Aromatics and Deglaze

    Reduce heat to medium. Add chopped onion, carrot, and celery to the pot and sauté 6–8 minutes until softened and starting to color. Add smashed garlic and 2 tbs tomato paste; cook 1–2 minutes until tomato paste darkens. Pour in 1 cup red wine to deglaze, scraping up browned bits, and simmer 2–3 minutes to reduce slightly.

    Braise

    Return short ribs to the pot. Add 4 cups beef stock, 3 thyme sprigs, and 2 bay leaves. Bring to a gentle simmer, then cover and transfer to the preheated oven. Braise until meat is fall-apart tender, 2.5–3 hours. Check once at 1.5 hours to ensure liquid hasn't evaporated; add a splash of stock if necessary.

    Rest and Strain

    When tender, remove ribs to a tray and tent loosely with foil. Strain the braising liquid through a fine-mesh sieve into a bowl, pressing on solids to extract flavor. Reserve solids for flavoring the jus (see next section) or discard. Skim fat from the surface and set 1 cup of strained liquid aside for the jus; reserve the rest if you want to reduce into a secondary sauce or to reheat with the ribs.

Smoked Onion Jus

    Smoke Onion

    While ribs braise (or using a small stovetop smoker or grill), cut 1 red onion in half and char on a hot grill or in a dry cast-iron skillet until edges are deeply browned and slightly smoky, 8–12 minutes. Alternatively, place halved onion under a broiler for 10–12 minutes, turning to get smoky coloration. Chop the charred onion and reserve.

    Make Jus

    In a medium saucepan melt 2 tbs butter over medium heat. Add 1 tbs minced shallot and sauté until translucent, about 2 minutes. Add the chopped smoked red onion and 1 tsp smoked paprika; cook 1–2 minutes to bloom the spice. Stir in the 1 cup reserved braising liquid and an additional 2 cups beef stock. Add 1 tsp brown sugar and 1 tsp red wine vinegar. Simmer gently until reduced by about one-third and slightly thickened, 12–18 minutes.

    Finish and Strain

    Taste and adjust seasoning with 1 tsp salt and 1/2 tsp black pepper. For a smooth jus, strain through a fine-mesh sieve, pressing solids to extract flavor, then skim fat. If you want a glossy finish, whisk in 1 tbs cold butter off the heat just before serving.

Koji‑Creamed Kale

    Bring a large pot of salted water to a boil. Blanch chopped kale for 1 minute until bright green and slightly tender, then shock in an ice bath. Drain and squeeze out excess water; coarsely chop if necessary.

    In a skillet over medium heat, melt 2 tbs unsalted butter and add 2 minced garlic cloves. Sauté 30–45 seconds until fragrant. Add the blanched, drained kale and sauté 1–2 minutes to heat through.

    Lower heat, add 3 tbs heavy cream and 2 tbs cream cheese or mascarpone, stirring to combine. Stir in 1 tsp koji paste (or 1 tsp white miso if using substitute). Cook gently 2–3 minutes until creamy. Finish with 1/2 tsp lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper. Keep warm until plating.

Beets

    Preheat oven to 400°F (200°C) or use the same oven after ribs are done. Toss 8 small beets with 1 tbs olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Wrap individually in foil or place in a covered roasting pan.

    Roast beets until tender when pierced with a skewer, about 35–50 minutes depending on size. Cool slightly, peel by rubbing skins off with a towel (skins should slip off), and halve or quarter for plating. Keep warm.

Finish & Plate

    Reheat short ribs gently in a little reserved braising liquid if necessary. Place a spoonful of koji‑creamed kale at the center of each plate, arrange roasted beets alongside, and place one short rib on top or leaning against the kale. Spoon smoked onion jus around or over the short rib (about 2–3 tbs per serving).

    Garnish with microgreens or parsley and a sprinkle of flaky sea salt. Serve immediately.
