Inspect and prepare
Check the maguro loin for any dark bloodlines or sinew. Using a very sharp knife, trim away any brownish or sinewy parts, leaving clean bright-red flesh. Pat the loin dry with paper towels.

Season
Lightly season all sides of the tuna with the fine sea salt and ground white pepper. Let rest at room temperature for 5 minutes to allow the salt to draw flavors in.

Sear (optional) or serve raw
For a tataki-style quick sear: heat neutral oil in a heavy skillet until shimmering but not smoking. Sear each side of the loin for 10–15 seconds, just enough to color the exterior while keeping the center raw. Immediately transfer to a plate and let rest 1–2 minutes. If serving fully raw sashimi-style, skip searing and proceed to slicing.

Slice
Using a long, sharp sashimi or carving knife, slice the tuna against the grain into 1/8"–1/4" (3–6 mm) pieces for sashimi or slightly thicker (about 1/4"–3/8") if plated with rice. Wipe the blade between passes for clean cuts.

Finish and garnish
Arrange slices on a chilled plate or over rice/cucumber. Sprinkle toasted sesame seeds across the slices if using, add microgreens or thinly sliced scallions for color and texture, and briefly drizzle a small amount (about 1/2–1 teaspoon per portion) of the soy-citrus sauce over the fish just before serving.

Whisk together the low-sodium soy sauce, fresh lime or yuzu juice, mirin, honey, grated ginger, and toasted sesame oil in a small bowl until the honey dissolves and the dressing is homogenous. Taste and adjust: add a little more lime for brightness, more honey for balance, or a pinch of salt if needed. Stir in the thinly sliced jalapeño if using and let the flavors marry for 5 minutes.
