Chill and inspect
Keep the bluefin tuna chilled until just before slicing. Pat the loin dry with paper towels. Inspect for any bloodlines or silver skin and trim lightly with a small sharp knife, removing only what is necessary.

Optional quick marinade
If using the quick marinade, combine mirin, rice vinegar and neutral oil in a shallow dish. Lightly brush the marinade over the tuna on all sides and let sit 2–3 minutes at room temperature. Do not soak—this is only to add a subtle sheen and flavor.

Season
Lightly season the tuna with sea salt and freshly ground black pepper just before slicing. This highlights the tuna's flavor without overpowering it.
Slicing & Plating

Slice for akami
Position the loin on the cutting board with the grain running left-to-right (or vice versa) and your dominant hand guiding the knife. Using a single, smooth pull-cut with a very sharp knife, slice the loin into 6–8 even pieces about 0.6–0.9 cm thick (roughly 1/4"–3/8"). For sashimi-style akami, make clean strokes without sawing to preserve texture. Wipe the blade between cuts to keep slices pristine.

Alternate cuts (optional)
For nigiri-size portions, cut slightly thicker slices (about 1.2 cm) and shape each slice over a small hand-formed rice ball. For tataki-style, briefly sear the outside (12–20 seconds per side) and then slice as above.

Arrange and garnish
Arrange slices neatly on a chilled plate with a little spacing. Sprinkle toasted sesame seeds lightly over the fish if using. Add thinly sliced scallion and microgreens or shiso leaves for color. Place a small mound of wasabi and pickled ginger on the side and serve soy sauce for dipping.
Serving

Serve immediately at sashimi temperature (slightly chilled). Encourage diners to dip tuna lightly into soy sauce—wasabi may be mixed into the soy or applied directly to the slice, per preference.

Leftover raw tuna should be consumed the same day. If storing briefly, wrap tightly in plastic and refrigerate for no more than 12–18 hours.
