In a medium bowl combine fresh lime juice, lime zest, soy sauce, mirin, sesame oil, granulated sugar, and freshly ground black pepper. Whisk until sugar is dissolved and the mixture is homogeneous.

Prepare marinade

Stir in the grated garlic and grated ginger to the marinade, then add the thinly sliced gyutoro. Toss gently with tongs or chopsticks so each slice is lightly coated. Cover and refrigerate for 15–30 minutes — no more than 30 minutes to avoid 'cooking' the beef with the lime.

Add aromatics to marinade

About 10 minutes before cooking, remove the beef from the refrigerator and let it sit at room temperature while you prepare rice and heat the pan. Reserve any leftover marinade for finishing (do not reuse marinade that has touched raw beef unless you boil it).

Bring to room temperature

Prepare 2 cups steamed short-grain rice according to package directions so it is ready when the beef is finished. Fluff and keep warm.

Cook rice

Heat a heavy skillet or cast-iron pan over high heat until smoking hot. Add 1 tsp neutral oil and swirl. Working in a single layer and in batches if necessary, add the marinated gyutoro slices and sear 20–40 seconds per side until just browned at the edges but still rare in the center (thin slices cook extremely fast). Turn with tongs. Remove seared slices to a warm plate.

Sear beef (quick high-heat method)

If you want a glossy sauce, bring the reserved marinade to a boil in a small saucepan for 1 minute to kill bacteria and reduce slightly, then drizzle 1–2 teaspoons over the cooked beef just before plating.

Finish with reserved marinade (optional)

Divide rice among 2–3 bowls. Arrange seared gyutoro over rice or alongside salad greens. Sprinkle sliced scallions, toasted sesame seeds and cilantro leaves over the beef. Add lime wedges at the side for extra acidity to squeeze over the finished dish.

Plate and garnish

Serve immediately while beef is warm. Offer extra soy or lime on the side. Enjoy as a main with rice and salad or as part of a multi-course meal.

Serve

Because lime juice is acidic, marinating time is short to avoid textural changes. If you prefer a lightly ceviche-style preparation, use grapefruit or citrus very briefly and ensure high-quality sashimi-grade beef from a trusted source. Any reserved marinade used as a sauce should be boiled first.

Trim any excess loose fat from the ribs and remove the membrane from the bone side if present: slide a paring knife under the membrane at one end, loosen it and pull it away using a paper towel for grip.

Prepare the ribs

In a small bowl combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder and brown sugar. Stir until evenly mixed.

Make the dry rub

Pat the ribs dry with paper towels. Rub olive oil evenly over both sides of the rib rack, then massage the dry rub onto both sides, pressing it into the meat. Drizzle the apple cider vinegar over both sides and let the ribs sit at room temperature for 20 minutes or refrigerate, covered, for up to 4 hours to let flavors penetrate.

Season the ribs

Preheat the oven to 300°F (150°C). Choose a roasting pan or deep baking dish large enough to hold the ribs in a single layer, bone side down.

Preheat oven and prepare braising pan

In a measuring cup or bowl whisk together stock, water, soy sauce and the tablespoon of brown sugar until sugar dissolves. Add the bay leaf and whole peppercorns to the braising pan.

Combine liquid

Place the seasoned ribs bone-side down into the pan. Pour the braising liquid around the ribs — it should come up the sides but not cover the top of the meat (aim for 1/3 to 1/2 of the ribs submerged). Cover tightly with a lid or foil and transfer to the oven. Cook for 2 to 2.25 hours, until the meat is tender and pulls back from the bones slightly.

Braise the ribs

Carefully remove the pan from the oven. Transfer ribs to a cutting board and tent with foil to keep warm. Pour the braising liquid into a small saucepan and simmer gently over medium heat until reduced by about half and slightly syrupy (5–8 minutes). Skim any fat if desired.

Rest and reduce liquid

Return the ribs to the pan or place on a rimmed baking sheet lined with foil. Combine the reduced braising liquid with the barbecue sauce and butter; brush the mixture generously over the ribs.

Glaze the ribs

Set oven to broil (or high 500°F / 260°C) and place the ribs 6–8 inches from the heat source. Broil for 3–5 minutes, watching carefully, until the glaze bubbles and caramelizes but does not burn. Remove when nicely browned.

Optional broil for caramelization

Let the glazed ribs rest 5 minutes, then slice between the bones into individual ribs. Spoon any remaining glaze over the sliced ribs. Garnish with chopped parsley and serve with lemon wedges if using.

Pat the pork jowl dry with paper towels. If it is a single slab, cut into 1/2–3/4-inch slices. Lightly score the fat surface in a crosshatch pattern so the marinade and heat render evenly.

Prepare and Score

In a bowl, whisk together soy tare (or dark soy sauce), mirin, sake, brown sugar, grated ginger, minced garlic, gochujang (or doubanjiang), shichimi togarashi (or crushed red pepper), sesame oil, salt, and black pepper until the sugar dissolves and the paste is fully incorporated.

Make the Marinade

Place the sliced jowl in a shallow dish or resealable bag and pour the marinade over it, turning to coat thoroughly. Press the slices flat so the marinade contacts both sides. Refrigerate for at least 2 hours, ideally overnight (8–12 hours) for best flavor penetration.

Marinate

Remove the marinated jowl from the refrigerator 30 minutes before cooking to take the chill off. Reserve the marinade.

Bring to Room Temperature

If using a grill, preheat to medium-high (about 425–475°F / 220–245°C). If using a cast-iron skillet or griddle, heat it over medium-high until almost smoking. Oil the grill grates or pan lightly with the neutral oil to prevent sticking.

Preheat Grill or Cast-Iron Pan

Place the jowl slices fat-side down first if there is a discernible fat cap. Cook without moving for 2–3 minutes until the fat renders and a deep brown crust forms. Flip and continue cooking 1.5–3 minutes more until the meat is caramelized and cooked through but still tender. Total cook time per side will vary with thickness; aim for an internal temperature of 145°F (63°C) for tender, slightly medium pork. Baste once or twice with reserved marinade during the last minute of cooking if desired, but avoid heavy basting early to prevent burning from the sugar.

Render and Sear

If you have binchotan charcoal, place the cooked slices briefly (10–20 seconds per side) on a very hot grate over the charcoal or hold them over the charcoal in a grill basket to impart a subtle smoke. Do this quickly to avoid overcooking; you only want aroma and light char.

Optional Charcoal / Binchotan Finish

Transfer the cooked jowl to a plate and let rest for 3–4 minutes. Arrange the shredded cabbage or mizuna on the serving platter as a bed. Place slices of jowl on top.

Scatter sliced scallions, chopped cilantro (if using), and toasted sesame seeds over the meat. Add a light drizzle of chili oil for extra heat if desired and a squeeze of lemon or lime wedges for brightness.

Serve immediately with steamed rice, pickles, or as part of a grilled assortment. Leftovers keep refrigerated in an airtight container for up to 3 days and reheat gently in a skillet.

Choose a high-quality akami (lean tuna loin), about 8 oz. Pat the fish dry with paper towels to remove excess moisture — this helps with seasoning adhesion and any quick sear.

Taste and season: sprinkle sea salt and white pepper evenly over both sides of the tuna (about 1/2 tsp salt and 1/4 tsp white pepper). Let sit 5 minutes to allow salt to begin curing the surface slightly.

Make a light glaze by whisking rice vinegar and mirin together in a small bowl. Gently brush both sides of the tuna with the glaze. This adds a subtle sweet-acid balance typical for akami preparations.

Option A — Raw (sashimi/nigiri): If serving raw, ensure fish is sushi-grade and very fresh. Slice the akami with a single smooth pull cut at a 45-degree angle into 6–8 slices approximately 1/4"–1/3" thick and 1–1.5" wide. Arrange slices on chilled plates or form over small rice nubs for nigiri. Proceed to garnish steps.

Option B — Light-seared (tataki): Heat 1 tablespoon neutral oil in a heavy skillet over high heat until shimmering but not smoking. Sear the tuna 10–15 seconds per side, turning with tongs until you have a thin browned crust while the interior remains rare. Immediately transfer to a cutting board and rest 1 minute. Using a sharp knife, slice as above. Proceed to garnish steps.

If serving with sushi rice: moisten your hands with a little water, take about 2 tablespoons of sushi rice and form small oblong nubs (nigiri). Lightly press a thin smear of wasabi onto each rice nub if desired.

Place an akami slice over each rice nub (for nigiri) or arrange sashimi slices on a plate. Alternatively, serve slices on a bed of microgreens or shiso.

Using a fork or potato masher, roughly mash the avocado flesh until mostly smooth but with some small chunks for texture (about 30–45 seconds).

Mash and combine

Add the lemon juice, olive oil, Greek yogurt (or sour cream), minced garlic, and the snipped chives to the mashed avocado. Stir gently to combine.

Add seasonings

Fold in kosher salt and freshly ground black pepper. Taste and adjust: add more lemon for brightness, more salt for seasoning, or up to 1 teaspoon red pepper flakes if you like a little heat.

Season to taste

If you prefer a silkier spread, mash a bit more or stir vigorously; for a lighter texture, fold in an extra teaspoon of olive oil or a little more yogurt. The spread should be creamy and scoopable.

Adjust texture

Let the spread rest 5–10 minutes at room temperature for flavors to meld. If making ahead, press plastic wrap directly onto the surface to minimize browning and refrigerate up to 24 hours.

Spoon the avocado-chive spread into a small serving bowl. Garnish with the extra snipped chives and a light drizzle of olive oil. Serve immediately with toasted baguette slices or crackers.

Remove scallops to a warm plate and tent loosely with foil while you make the butter pan sauce.

Reduce heat to medium. Add the unsalted butter to the same pan. As it melts, scrape up any fond (brown bits) left from searing with a wooden spoon — this adds flavor.

Lower heat

Add minced shallot and sauté 30–45 seconds until soft and translucent but not browned. Add minced garlic and cook 15–20 seconds until fragrant.

If using, pour in the white wine and simmer 30–45 seconds to reduce slightly, scraping the pan. Allow alcohol to cook off.

Stir in the lemon juice and swirl to combine, then taste and adjust seasoning with a pinch of salt and pepper if needed. Remove pan from heat.

Return scallops to the pan briefly (10–15 seconds) to coat with butter sauce and reheat; do not overcook.

Place the finely chopped dark chocolate in a heatproof bowl so it will melt quickly and evenly when hot cream is added.

Chop chocolate

In a small saucepan, combine the heavy cream and golden/corn syrup (if using). Heat gently over medium heat until it just begins to simmer and small bubbles form around the pan edge — do not let it boil vigorously.

Heat cream

Pour the hot cream over the chopped chocolate. Let sit undisturbed for 1 minute to soften the chocolate, then stir gently from the center outward with a spatula until the mixture is smooth and glossy and all chocolate is melted.

Make ganache
