Directions for Preparing Strawberry Okashi
Prepare the Matcha Sponge Cake
Preheat the oven to 180°C (350°F). In a bowl, whisk together the eggs and sugar until light and fluffy. Gradually add in the melted butter and vanilla extract. Sift together the flour, matcha powder, and baking powder, then fold into the egg mixture gently. Pour the batter into a greased cake pan and bake for 20-25 minutes, or until a toothpick comes out clean. Once baked, let it cool.
Prepare the Toasted Rice
In a dry skillet, toast the rice over medium heat until golden brown, stirring frequently to prevent burning. This will enhance the nutty flavor. Once toasted, let it cool and then crush lightly.
Assemble the Strawberry Okashi
Slice the cooled matcha sponge cake into layers. On the bottom layer, place a generous amount of fresh strawberries, followed by a sprinkle of the toasted rice. Add another layer of matcha sponge cake on top. Repeat the process until all layers are assembled. Finish with a layer of strawberries on top for garnish.
Serve
Cut the Strawberry Okashi into slices and serve chilled. Enjoy this delightful dessert with friends and family!
