Prep Dough & Oven
Bring dough to room temperature
Remove 1 lb pizza dough from refrigerator and let rest at room temperature for 30–45 minutes so it becomes relaxed and easier to stretch.
Place an oven rack in the lowest position if using a pizza stone (or center if using a baking sheet). Preheat oven to 500°F (260°C) with a pizza stone or an inverted heavy baking sheet inside for at least 30 minutes.
Shape & Sauce
Lightly flour a work surface and your hands. Press the dough into a flat disk, then use your fingers to stretch or roll into a 12-inch round (about 1/4-inch thick). Create a slightly thicker rim by leaving the outer 1/2–3/4 inch thicker and pressing inward beneath the rim.
Spread 1 cup house marinara sauce evenly over the dough, leaving the rim exposed (about 1/2 inch). Use the back of a spoon to create an even layer but avoid over-saucing.
Cheese & Toppings
Distribute 1 lb torn or sliced fresh mozzarella evenly over the sauced dough. Aim for full coverage but allow some sauce to peek through for flavor balance.
Choose your toppings from the suggested list. For a balanced pie, use no more than 3–4 toppings and keep total wet ingredients (mushrooms, artichokes, etc.) to about 1 cup combined to avoid sogginess.
If using raw meats (Italian sausage or extra-large pepperoni), pre-cook or use thin slices. Scatter chosen toppings evenly over the cheese. Sprinkle 2 tsp grated Parmesan over the top if desired.
Lightly season the pie with 1 tsp dried oregano, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Add thinly sliced garlic or red pepper flakes according to taste.
Bake & Finish
Slide the pizza (on parchment or peel) onto the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating halfway, until crust is golden and cheese is bubbling and slightly blistered. Baking time will vary by oven and thickness.
Remove pizza from oven and transfer to a cutting board. Let rest 2–3 minutes to set. Scatter fresh basil leaves across the top if using and drizzle a little olive oil if desired. Slice and serve immediately.
