Prepare the Mashed Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15 minutes. Drain and return to the pot.

Mash Potatoes

Add butter and milk to the potatoes, then mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

Cook the Sausages

In a skillet over medium heat, cook the sausages until browned and cooked through, about 10-12 minutes. Remove and set aside.

Make the Onion Gravy

In the same skillet, add chopped onion and sauté until softened, about 5 minutes. Sprinkle flour over the onions and cook for 1 minute.

Add Liquids

Slowly pour in the Guinness and beef broth, stirring constantly to prevent lumps. Simmer for about 5-7 minutes until thickened. Season with salt and pepper.

Serve

Place a generous serving of mashed potatoes on a plate, top with sausages, and drizzle with onion gravy.
