Clean and sanitize all brewing equipment, including fermenters and bottles, to prevent contamination.

Prepare the Brewing Equipment

In a brew kettle, heat 5 gallons of filtered water to approximately 165°F (74°C).

Once the water is heated, add the pale malt, Munich malt, flaked oats, and caramel malt to the kettle, stirring well.

Maintain the temperature at around 150°F (65°C) for 60 minutes, stirring occasionally.

Mashing

After mashing, drain the wort and rinse the grains with hot water to collect around 6 gallons of wort.

Lautering

Bring the wort to a boil and add Citra hops. Boil for 60 minutes.

Add Mosaic hops with 15 minutes remaining in the boil and Amarillo hops with 5 minutes remaining.

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale yeast.

Transfer to Fermenter

Seal the fermenter and allow it to ferment for about 1-2 weeks at a temperature between 65°F and 70°F (18°C to 21°C).

Prepare Bottles

Once fermentation is complete, transfer the beer to a bottling bucket, add priming sugar if desired, and bottle the beer.

Cap the bottles and store them in a cool, dark place for carbonation (about 1-2 weeks).
