Making the Ravioli

Prepare the Filling

In a mixing bowl, combine ricotta, mozzarella, parmesan, gorgonzola, fontina, egg, salt, and black pepper. Mix until smooth and well blended.

Make the Dough

In a large bowl, combine 2 cups of all-purpose flour with 3 large eggs and a pinch of salt. Knead until smooth and elastic, about 10 minutes. Wrap in plastic wrap and let rest for 30 minutes.

Roll Out the Dough

Divide the dough into four pieces. Roll out each piece on a floured surface until thin, about 1/16 inch thick.

Form the Ravioli

Place a teaspoon of the cheese filling about 2 inches apart on one sheet of dough. Moisten the edges with water, then cover with another sheet of dough. Press down to seal and cut into squares or circles.

Bring a large pot of salted water to a boil. Add ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
