Prepare the Ingredients

Chop the onion, garlic, red bell pepper, green bell pepper, jalapeño pepper, carrot, and celery into small, even pieces for even cooking.

Trim the Brisket

Trim excess fat from the brisket and cut it into 1-inch cubes.

Brown the Brisket

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed brisket to the pot and brown on all sides, about 5-7 minutes. Remove the brisket from the pot and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion, garlic, bell peppers, jalapeño, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

Add Spices

Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional minute until fragrant.

Combine Ingredients

Return the browned brisket to the pot. Add the diced tomatoes, kidney beans, black beans, and beef broth. Stir well to combine.

Simmer the Chili

Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 2-3 hours, stirring occasionally, until the brisket is tender.
