Preparation

Mashing

1. Prepare the Mash

Heat 5 gallons of water to around 165°F (74°C). Add the crushed Pale Malt, Caramel Malt, and Crystal Malt to the water and stir well. Maintain the temperature around 150-155°F (65-68°C) for 60 minutes to allow the sugars to extract from the grains.

2. Sparging

After mashing, drain the wort from the grains and rinse them with an additional 170°F (77°C) water until you collect about 6.5 gallons of wort.

Boiling

3. Boil the Wort

Bring the wort to a boil in a large pot. Once boiling, add the Citra Hops and boil for 60 minutes.

4. Add Hops

At the 15-minute mark, add the Simcoe Hops, Amarillo Hops, and Cascade Hops for flavor and aroma.

Fermentation

5. Cool the Wort

After the boil, cool the wort quickly to 70°F (21°C) using a wort chiller or an ice bath.

6. Pitch the Yeast

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the American Ale Yeast on top of the wort and seal the vessel with an airlock.

Bottling

7. Prepare Bottling Solution

Dissolve the Priming Sugar in 2 cups of boiling water. Let it cool, then add it to the beer before bottling.

8. Bottle the Beer

Transfer the beer into sanitized bottles, leaving some space at the top. Cap the bottles and let them condition at room temperature for about 2 weeks.
