    Prepare feta base

    Crumble the sheep's milk feta into a medium bowl. Add the Greek yogurt and lemon juice, then gently fold together with a spatula until the mixture is evenly combined but still slightly chunky — you want a creamy, broken texture rather than a smooth puree.

    Taste and season the feta mixture with 1/4 tsp freshly ground black pepper (adjust salt later after tasting with harissa). Set aside at room temperature while you prepare the other components so flavors come together.

Green Harissa

    Make green harissa

    In a small food processor or blender, combine the cilantro, parsley, mint, roasted green chile (roughly chopped), garlic clove, almond or macadamia butter, lemon zest, lemon juice, ground cumin, smoked paprika, 3 tablespoons olive oil, 1/2 tsp salt, and 1/4 tsp black pepper.

    Pulse until the mixture becomes a coarse, spoonable paste — stop and scrape down the bowl once or twice. If the harissa seems too thick, add up to 1 additional tablespoon olive oil or 1-2 teaspoons water to reach a spreadable consistency. Taste and adjust salt or lemon as needed.

Crisp Apple & Nuts

    Toast macadamia nuts

    Heat a small skillet over medium heat. Add 1 tsp olive oil and the chopped macadamia nuts. Toast, stirring frequently, until fragrant and lightly golden, about 3–4 minutes. Remove from heat and immediately toss with 1/8 tsp sea salt. Let cool slightly.

    Prepare apple

    Core and small-dice the apple into roughly 1/4-inch pieces. Toss the diced apple with a light squeeze of lemon from the wedges (to prevent browning) if desired. Keep apples refrigerated or chilled briefly if not using right away so they stay crisp.

Assembly & Finish

    Assemble crumbled feta

    Spoon the feta-yogurt mixture onto a shallow serving plate and spread into a loose oval about 3/4-inch thick. Using the back of a spoon, create a few shallow wells for the harissa and apple-nut mixture.

    Dot or spoon 2–3 tablespoons of the green harissa across the top of the feta in small dollops. Scatter the diced apple evenly over the feta, then sprinkle the toasted macadamia nuts on top.

    Finish with a drizzle of good olive oil (about 1 tablespoon), a few turns of freshly ground black pepper, and microgreens or small herb leaves if using. Serve with lemon wedges on the side for guests to squeeze over.

    Taste and adjust seasoning at the table — add a light sprinkle of flaky sea salt if you want more contrast. Serve at room temperature with crusty bread, crackers, or raw vegetable sticks.
