Method

Sandwich

    Prepare bread

    Spread mayonnaise (optional) evenly on the outer face of each bread slice. This gives a golden crust; alternatively, use softened butter. If using butter instead, spread 1 tbsp butter evenly across both outer faces.

    Assemble

    Place one slice of bread, mayo/butter-side down, on a plate. Put 2 slices of American cheese on top, slightly overlapping. Season lightly with freshly ground black pepper if desired. Top with the second bread slice, mayo/butter-side up.

    Griddle

    Heat a nonstick skillet or griddle over medium-low heat. Place the assembled sandwich in the skillet. Cook 3–4 minutes on the first side until golden brown and the cheese begins to melt. Press gently with a spatula to promote even contact. Flip and cook 2–3 more minutes on the other side until golden brown and cheese is fully melted. If cheese is not melting, cover pan with a lid for 1 minute to trap heat and finish melting.

    Rest and slice

    Remove sandwich to a cutting board and let rest 1 minute (prevents cheese from running out). Slice diagonally in half and serve immediately.

Choice of side — French Fries

    If using frozen fries, bake or air-fry according to package instructions until golden and crisp (typically 12–18 minutes at 425°F/220°C for oven; 10–12 minutes at 400°F/200°C for air fryer), tossing once. If using fresh cut fries, toss potato sticks with 2 tbsp vegetable oil and 1/2 tsp salt, spread in a single layer on a baking sheet and roast at 425°F/220°C for 25–30 minutes, flipping once, until crisp and golden. Adjust seasoning to taste.

    Keep fries warm while grilling sandwich so both are ready together.

Choice of side — Mixed Green Salad

    Combine mixed greens and halved cherry tomatoes in a bowl. Drizzle with 1 tsp olive oil and 1 tsp lemon juice or vinegar. Season with 1/8 tsp salt and 1/8 tsp black pepper, toss gently to combine.

    Serve chilled or at room temperature alongside the grilled cheese.
