Wagyu Hot Dog & Buns

Prepare meat and form dogs
Chill the ground wagyu in the refrigerator for 15–20 minutes so it firms slightly (very cold meat helps a tight texture). In a large bowl, combine the ground wagyu, 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1/2 tsp ground coriander and 2 tbs ice water. Mix gently but thoroughly with clean hands or a spatula until ingredients are evenly distributed and the mixture becomes slightly tacky (about 1–2 minutes). Divide the mixture into 4 equal portions. Shape each portion into a classic hot-dog log about 5–6 inches long and 1 inch in diameter, pressing ends slightly to form rounded tips. Wrap each formed dog in plastic wrap and chill in the refrigerator for 15 minutes to hold shape.

Cook the wagyu dogs
Preheat a cast-iron skillet or grill to medium-high heat. Lightly brush the dogs with 1 tsp olive oil. Place the wagyu hot dogs on the hot surface and sear, turning every 1–2 minutes to brown all sides and avoid flare-ups. Cook to an internal temperature of 145°F (63°C) for medium (about 6–8 minutes total depending on thickness). Because wagyu has higher fat, watch for flare-ups and tilt the pan or move dogs if flames appear. Remove to a plate and let rest 3 minutes.

Pickled Red Onion

Make quick pickles: Put the thinly sliced red onion into a heatproof jar or bowl. In a small saucepan, combine 1/2 cup rice vinegar, 1/2 cup water, 1 tbs sugar and 1/2 tsp salt. Heat until sugar and salt dissolve, then pour the hot brine over the onions. Let cool to room temperature, then cover and refrigerate for at least 20 minutes (best if made 1 hour ahead). Drain before using.
Charred Sweet Pepper Relish

Char and chop peppers: Place the red bell pepper (and optional Fresno) directly on a gas burner, under a broiler, or on a hot grill, turning until skins are blackened on all sides (about 8–10 minutes). Transfer to a bowl and cover tightly with plastic wrap or a lid for 10 minutes to steam (this loosens skins). Peel off the charred skin, remove seeds and stems, then finely dice the flesh.

Finish relish: In a small bowl combine the diced charred pepper, 1 tsp olive oil, 1 tbs vinegar, 1/2 tsp honey and 1/4 tsp salt. Stir and adjust seasoning to taste. Set aside at room temperature.
Creamy Mustard Sauce

Whisk together 2 tbs Dijon mustard, 1 tsp whole-grain mustard, 3 tbs mayonnaise, 1 tsp lemon juice and 1/4 tsp black pepper until smooth. Taste and adjust lemon or salt if desired. Refrigerate if not using immediately.

Assemble the wagyu hot dogs: Spread a thin layer of the creamy mustard sauce inside each toasted bun. Place one rested wagyu hot dog into each bun. Spoon 1–2 tbs charred sweet pepper relish over the hot dog, add a few pickled red onion slices, then finish with a sprinkle of microgreens or chopped chives and a light pinch (about 1/16 tsp) of coarse sea salt. Serve immediately.

Serving suggestion and notes: Serve with extra mustard sauce and pickled onions on the side. Because wagyu is rich, keep toppings bright and acidic (pickles, vinegar in relish) to balance the richness. Leftover cooked wagyu dogs can be refrigerated up to 2 days; reheat gently in a skillet.
