Prepare vegetables
Thinly slice the onions and separate into rings. Peel and julienne the potato if using. Finely wash and chop the spinach and cilantro. Finely chop the green chilies. Pat the sliced onions and other vegetables lightly with paper towel to remove excess surface moisture so the batter will adhere.
Measure out and have ready all dry ingredients for the batter (besan, rice flour, spices).
Make Batter & Combine
Mix dry batter ingredients
In a large mixing bowl combine 2 cups gram flour, 1/4 cup rice flour, 1/2 tsp turmeric, 1 tsp red chili powder, 1 tsp cumin seeds, 1/2 tsp ajwain, 1/2 tsp garam masala (if using), and 1.5 tsp salt. Whisk together so spices are evenly distributed.
Add water to form a thick batter
Gradually add about 2 to 2 1/2 cups of cold water while whisking to avoid lumps. The final consistency should be thick enough to coat vegetables — similar to a loose pancake batter that clings to a spoon. Reserve the remaining water to adjust consistency if needed.
Fold in vegetables and optional ingredients
Add the sliced onions (3 cups), julienned potato (1 cup, if using), chopped spinach (1 cup), green chilies (2 tbsp), and cilantro (1/2 cup) into the batter. Sprinkle in 1/4 tsp baking powder if using and 1 tbsp lemon juice (optional). Use a large spoon to mix gently until all vegetable pieces are evenly coated. If batter becomes too thin from vegetable moisture, add up to 1-2 tbsp more gram flour to tighten.
Let the mixture rest for 5–10 minutes. This helps the flours hydrate and the flavors meld.
Frying
Heat oil
Pour oil into a deep, heavy-bottomed pan or kadai to a depth of about 2–3 inches (approximately 3–4 cups). Heat over medium-high until oil reaches 350–360°F (175–180°C) — a small batter drop should sizzle and rise slowly to the surface. If you don't have a thermometer, test with a tiny piece of batter: it should take about 30–45 seconds to brown.
Fry pakoras
Using a tablespoon or your fingers, drop small mounds of the vegetable-batter mixture into the hot oil, taking care not to overcrowd the pan (work in batches of 8–10 pieces depending on size). Fry, turning occasionally, until golden brown and crisp, about 4–6 minutes per batch. Adjust heat as needed so pakoras cook through without burning.
Drain and keep warm
Use a slotted spoon to remove pakoras and drain on a paper towel-lined tray. Transfer to a warm oven (about 200°F / 95°C) on a baking sheet if making multiple batches so they stay crisp.
Serve
Serve onion/vegetable pakoras hot with mint-coriander chutney, tamarind chutney, or ketchup. Optionally sprinkle a pinch of chaat masala or extra salt and a squeeze of lemon over the pakoras before serving.
