Prep the cauliflower

Wash the cauliflower and cut into bite-sized florets. Pat dry thoroughly with a kitchen towel or let air dry for 10–15 minutes so excess moisture is removed (this helps crisping).

Make the marinade

In a large bowl combine 1/2 cup yogurt, 1 tsp turmeric powder, 1 tsp red chili powder, 1 tsp salt, 1 tbs ginger-garlic paste, 2 tbs cornstarch and 2 tbs all-purpose flour (or gram flour). Whisk into a smooth batter. The batter should coat the back of a spoon; add a teaspoon of water if too thick.

Marinate cauliflower

Add the dry cauliflower florets to the marinade and toss until evenly coated. Let sit for 15–20 minutes so flavors penetrate and the coating adheres.

Shallow fry or pan-fry the florets

Heat about 4 tbs oil in a wide heavy skillet over medium-high heat. When hot, add the marinated florets in a single layer (work in batches if needed) and fry, turning occasionally, until golden-brown and crisp on edges, about 6–8 minutes per batch. Remove to a paper towel-lined plate to drain. (Alternatively, for a lighter version, arrange coated florets on a baking tray and roast at 220°C / 430°F for 20–25 minutes, turning once.)

Tempering and Stir-Fry

Prepare tempering

In the same skillet (wipe out excess oil leaving about 2 tbs), add remaining 2 tbs oil and heat over medium heat. Add mustard seeds and let them crackle, then add cumin seeds and asafoetida. Stir for 10–15 seconds until fragrant.

Sauté aromatics

Add curry leaves and slit green chilies, sauté for 20–30 seconds. Add sliced onion and sauté until translucent and starting to brown at the edges, about 4–5 minutes.

Add tomato and spices

Add chopped tomato and cook 2–3 minutes until softened. Stir in 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 1/4 tsp garam masala and 1/4 tsp freshly ground black pepper. Cook until oil begins to separate slightly from the tomato-onion mixture, about 2 minutes. Taste and add up to 1/2 tsp salt if needed.

Combine cauliflower with tempering

Return the fried cauliflower florets to the skillet. Toss gently to coat each piece with the spiced onion-tomato mixture. Cook on medium heat for 3–4 minutes so the flavors meld and cauliflower reheats. If you prefer a slightly sticky glaze, sprinkle 1 tsp water and cook 1 more minute, stirring constantly to coat.

Finish and garnish

Sprinkle 1 tsp amchur (dry mango powder) or squeeze fresh lemon juice, add chopped cilantro and toss once. Adjust seasoning with additional salt or lemon to taste. Remove from heat and transfer to a serving plate.

Serve hot as an appetizer or side dish with lemon wedges and a cooling raita or chutney.
