Method

Prepare chickpeas & fenugreek

Rinse 1 cup dried chickpeas under cold water. Soak them in enough water to cover by 2–3 inches for at least 8 hours or overnight. If short on time, use the quick-soak method: bring chickpeas and water to a boil for 2 minutes, remove from heat and let sit 1 hour.

After soaking, drain and rinse chickpeas. Transfer to a pressure cooker or pot, add 4–5 cups fresh water and 1/2 tsp salt. Add bay leaf, cinnamon stick, cardamom and cloves. Pressure cook for 15–20 minutes on medium-high (about 3–4 whistles) until tender but not mushy. If using a pot, simmer 45–60 minutes until tender, adding water if needed. Reserve cooking liquid.

While chickpeas cook, wash the fresh fenugreek leaves thoroughly to remove grit. Roughly chop and set aside (2 cups packed).

Make the spice paste

In a blender, combine chopped onion (about 1 cup), tomato (1 cup), garlic cloves (4) and 1 tablespoon ginger with the green chili (if using). Blend to a smooth or slightly coarse paste using 2–3 tablespoons of water as needed.

Cook the masala and combine

Heat 2 tbs oil or ghee in a deep pan or kadhai over medium heat. Add cumin seeds and let them sizzle for 10–15 seconds. Add a pinch of asafoetida, the bay leaf, cinnamon, cardamom and cloves (from the spices list if not already removed after cooking chickpeas).

Add the blended onion–tomato paste. Fry on medium-low heat for 8–10 minutes, stirring occasionally, until raw smell disappears and the oil begins to separate from the masala.

Stir in turmeric powder (1 tsp), red chili powder (1 tsp), coriander powder (1 tbs) and 1 tsp salt. Fry the spices with the masala 1–2 minutes to bloom the flavors.

Add the chopped fresh methi (fenugreek) leaves to the pan. Cook, stirring, for 4–5 minutes until the leaves wilt and integrate into the masala. If the mixture looks too dry, add 2–3 tbs of the reserved chickpea cooking liquid to loosen it.

Add the cooked chickpeas along with about 1 cup of the reserved cooking liquid (adjust for desired consistency). Mix gently to combine. Bring to a gentle simmer and cook for 8–10 minutes so the chickpeas absorb the flavors. If you prefer a thicker gravy, mash a few chickpeas against the side of the pan and stir in.

Check seasoning and add more salt if needed. Stir in garam masala (1 tsp) and amchur (1 tsp) or 1 tbs lemon juice to balance flavors. Simmer 1–2 minutes more.

Finish & garnish

Turn off heat and sprinkle crushed kasuri methi (1 tsp) if using. Mix in chopped fresh cilantro (2 tbs).

Rest the curry for 5 minutes to allow flavors to meld. Serve hot with rice, roti, or bhature.
