Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients

In a large mixing bowl, whisk together the flour and salt.

Combine Mixtures

Make a well in the center of the flour mixture and add the activated yeast mixture and olive oil. Mix until a dough begins to form.

Knead the Dough

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Shape the Pitas

Once risen, punch down the dough and divide it into 2 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1/2 inch thick.

Preheat the Oven

Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet in the oven to heat.

Bake the Pitas

Place the discs onto the preheated stone or baking sheet and bake for about 5-7 minutes until they puff up and are lightly golden.

Cool and Serve

Remove the pitas from the oven and let them cool on a wire rack. Serve warm or store in an airtight container.
