Roast the Eggplant

Preheat your grill or oven to medium-high heat. Prick the eggplant with a fork and grill or roast it until the skin is charred and the flesh is soft, about 20-25 minutes. Turn occasionally for even cooking.

Prepare the Dip

Once the eggplant is cool enough to handle, scoop the flesh into a mixing bowl. Add olive oil, lemon juice, tahini, grilled sweet pepper (chopped), garlic, salt, and ground cumin. Mash the mixture with a fork or blend using a food processor until smooth or reach desired consistency.

Taste and Adjust

Taste the babaganoush and adjust the seasoning as needed, adding more salt, lemon juice, or garlic to suit your preference.

Serve

Transfer the babaganoush to a serving dish, drizzle with a little extra olive oil, and sprinkle fresh parsley on top. Serve with warm pita bread.
