    Prepare

    Chill a coupe or martini glass by filling it with ice water while you prepare the drink, or place it in the freezer for a few minutes.

    Measure

    Measure 2 oz gin, 0.75 oz fresh lime juice, and 0.5 oz simple syrup into a cocktail shaker.

    Add ice

    Add 6 ice cubes to the shaker so the liquid will chill quickly and dilute slightly.

    Shake

    Secure the shaker and shake vigorously for 10–15 seconds, until the outside of the shaker feels cold and you see good condensation. This both chills and dilutes the cocktail to proper balance.

    Prepare glass

    Dump the ice water from the chilled glass and quickly strain the cocktail into the glass using a fine strainer or the shaker's built-in strainer.

    Garnish & serve

    Garnish with a lime wheel or wedge on the rim (or float it). Serve immediately.

    Notes

    Adjust sweetness by increasing or decreasing the simple syrup by 0.25 oz. For a vodka gimlet, substitute vodka for gin in a 1:1 ratio. Use freshly squeezed lime juice for best flavor.
