    Measure and combine

    Chill a coupe or Nick & Nora glass by placing it in the freezer or filling with ice water while you prepare the cocktail. In a cocktail shaker, add 1.5 oz Aperol, 1 oz blanc vermouth, 0.5 oz gin, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup.

    Ice and shake

    Fill the shaker with ice (enough to nearly fill). Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is very cold and slightly frosty.

    Strain

    Discard the ice or water from your chilled glass. Double-strain the shaken mixture into the chilled coupe/Nick & Nora glass using both the shaker strainer and a fine mesh strainer to remove tiny ice shards and any pulp.

Sparkle & Finish

    Top with sparkling wine

    Carefully top the strained cocktail with 2 oz chilled champagne or other dry sparkling wine. Pour gently to preserve bubbles and keep the drink from overflowing.

    Garnish and serve

    Express an orange twist over the surface of the cocktail to release oils, then drop the twist into the glass or rest it on the rim. Serve immediately while effervescent.

    Notes: Adjust sweetness by reducing or increasing the simple syrup by 0.125–0.25 oz. If you prefer a slightly more bitter profile, increase Aperol to 1.75–2 oz and reduce vermouth to 0.75 oz. For a longer drink, serve over ice in a highball and increase sparkling wine to taste.
