Prepare glass

Select a large wine glass or stemmed glass. Chill the glass briefly if desired (5–10 minutes in freezer) to keep the drink colder longer.

Fill the glass generously with ice until about three-quarters full. Using plenty of ice helps keep the spritz fizzy and properly chilled.
Build cocktail

Add Prosecco first
Pour 3 oz of chilled Prosecco gently into the ice-filled glass. Adding the sparkling wine first helps preserve its effervescence when you add the other ingredients.

Add Aperol
Slowly pour 2 oz of Aperol over the Prosecco. The lighter density of Aperol will mix gently without losing too many bubbles; pour down the side of the glass if desired for a layered look.

Top with soda
Add 1 oz of chilled soda water to finish. Pour gently to retain carbonation. Adjust the soda up to 1.5 oz if you prefer a lighter, more effervescent spritz.

Using a bar spoon, give the drink 2–3 slow, gentle turns to combine the ingredients. Avoid vigorous stirring to preserve the bubbles.
