Marinate the chicken thighs in buttermilk, salt, and black pepper for at least 2 hours or overnight for best results.
Heat oil in a fryer or large skillet to 350°F (175°C). Dredge the marinated chicken in a mixture of flour, cornstarch, and baking powder. Fry the chicken until golden brown and cooked through, about 8-10 minutes per side. Once cooked, drizzle with honey and sprinkle with powdered sugar.
In a bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix buttermilk, milk, eggs, and melted butter. Combine the wet and dry ingredients and stir until just mixed. Preheat a waffle iron and cook the batter according to the manufacturer's instructions until golden brown.
Prepare banana pudding according to package instructions, allowing it to set in the fridge while you finish cooking the chicken and waffles.
Serve the waffles topped with a piece of honey-dusted chicken, a side of banana pudding, and garnish with mint leaves. Dust with additional powdered sugar if desired.
