Method
Prepare Sushi Rice
Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.
Cook the Rice
In a rice cooker or pot, add the rinsed rice and 2.5 cups of water. Cook according to the rice cooker instructions, or bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until water is absorbed.
Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar and salt dissolve. Once the rice is cooked, transfer it to a large bowl and fold in the vinegar mixture gently. Allow to cool to room temperature.
Prepare Tuna
Slice the Tuna
Using a sharp knife, slice the fresh red tuna into thin, even slices, about 1/4 inch thick. Ensure the knife is clean to maintain the quality of the fish.
Assemble Nigiri
Form the Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into a small oval shape.
Top with Tuna
Place a slice of tuna over the molded rice, gently pressing it down to adhere the fish to the rice.
Serve
Plate the nigiri and serve with wasabi, soy sauce, and pickled ginger on the side.
