Prepare the Chicken

Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Cook the Chicken

Add the chicken thighs to the pot, browning them on both sides for about 6-8 minutes. Remove the chicken and set aside.

Combine Ingredients

In the same pot, add the green chiles, chicken broth, cumin, oregano, salt, and black pepper. Stir well to combine.

Simmer the Stew

Return the chicken to the pot, bring to a boil, then reduce the heat to low. Cover and let simmer for 30 minutes, or until the chicken is cooked through and tender.

Shred the Chicken

Remove the chicken from the pot, shred it with two forks, and return it to the stew. Stir to combine.

Serve

Ladle the stew into bowls, and top with crispy tortilla strips, diced avocado, and a squeeze of lime juice.
