Prepare the Rice

Cook the jasmine rice according to package instructions. Set aside to cool, preferably refrigerating it for a few hours or overnight for best results.

Cook the Protein

In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add your choice of protein (chicken, shrimp, or beef) and cook until fully cooked through. Remove from skillet and set aside.

Sauté the Vegetables

In the same skillet, add another tablespoon of oil. Add the diced onion and sauté until translucent, about 3-4 minutes. Then add the chopped scallions and cook for an additional 1-2 minutes.

Add Eggs

Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked.

Combine Ingredients

Add the cooled rice to the skillet along with the cooked protein, soy sauce, salt, and pepper. Stir everything together, ensuring the rice is evenly coated and heated through.

Finish and Serve

Remove from heat and stir in the chopped cilantro. Serve hot, garnished with additional scallions if desired.
