Wagyu Mini Burgers

    Prepare patties

    Divide the ground Wagyu into eight equal portions (about 2 oz each). Gently form each portion into a thin, slightly wider-than-the-bun patty (do not overwork the meat). Season both sides of each patty with a light sprinkle of sea salt and cracked black pepper.

    Toast buns

    Heat a large skillet or griddle over medium heat. Add the unsalted butter and swirl to melt. Split the mini buns and place cut-side down on the pan. Toast until golden, about 1–2 minutes. Remove and set aside.

    Cook patties

    Increase heat to medium-high. Add the patties to the hot skillet (work in batches if needed) and press gently with a spatula to ensure even contact. Cook 1.5–2 minutes without moving to form a crust. Flip and cook another 1–1.5 minutes for medium-rare to medium (adjust time if you prefer more done). Immediately place a slice of American cheese on each cooked patty, cover the pan briefly (30–45 seconds) to melt the cheese.

    Assemble sliders

    Spread about 3/4 tsp of ketchup on the bottom half of each toasted bun (adjust to taste). Add a cheesy Wagyu patty, top with a pickle slice (if using), a light smear of mustard on the top bun (optional), then close the slider. Repeat for all sliders.

    Rest and serve

    Let assembled sliders rest for 1 minute so juices redistribute. Arrange on a platter with remaining ketchup for dipping.

Crispy Potato Chips

    Prepare potatoes

    Thinly slice the Yukon Gold potatoes to about 1.5 mm thickness using a mandoline or sharp knife for even chips. Place slices in a bowl of cold water and swish to remove excess starch. Drain and repeat until water runs clear (2–3 changes). Pat potato slices very dry on clean kitchen towels or paper towels.

    Heat oil

    Pour oil into a heavy-bottomed pot or deep pan to a depth of about 2–3 inches (use enough so chips can float). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping one slice — it should sizzle steadily.

    Fry chips

    Fry the potato slices in small batches (do not overcrowd) for 2–4 minutes, stirring gently, until golden and crisp. Remove with a spider or slotted spoon and transfer to a paper-towel–lined tray to drain. Immediately sprinkle with fine sea salt and, if desired, smoked paprika while still hot so seasoning adheres.

    Let chips cool for a minute to crisp further. Transfer to a serving bowl or nestle alongside the sliders on the platter.
