    Prepare glass and muddle

    Place the fresh mint leaves and granulated sugar in a sturdy highball or Collins glass. Squeeze the fresh lime juice into the glass (add the spent lime shell if you like extra aroma). Using a muddler or the handle of a wooden spoon, gently press and twist the mint and sugar together 6–8 times to release the mint oils and dissolve the sugar. Take care not to shred the mint into tiny pieces; you want bruised leaves, not pulverized.

    Add rum and ice

    Pour the white rum into the glass over the muddled mint and sugar. Add crushed ice to fill the glass about three-quarters full (approximately 1 cup).

    Top with soda and stir

    Pour the club soda over the ice (about 2 oz) and use a long bar spoon to gently stir the drink 6–8 times to lift the mint through the cocktail and mix the rum, lime, and sugar evenly.

    Garnish and serve

    Add a lime wedge to the rim or drop it in, and tuck a fresh mint sprig into the top of the drink for aroma. Serve immediately with a straw, slightly angled so you get mint aroma as you sip.
