Rinse all berries gently under cold running water. Drain in a colander and spread them on a clean kitchen towel or paper towels to remove excess moisture.

Hull the strawberries and cut any large strawberries into halves or quarters so their pieces are roughly the same size as the other berries.

Place strawberries, blueberries, raspberries, and blackberries in a medium mixing bowl.

Add the lemon juice, granulated sugar, and optional vanilla extract to the berries. Gently toss with a large spoon to combine, taking care not to crush the raspberries and blackberries. The lemon brightens flavor and the sugar lightly macerates the fruit.

Let the berries sit for 5–10 minutes at room temperature to macerate slightly and develop juices. If you prefer chilled, cover and refrigerate for 10–15 minutes instead.

Divide the macerated mixed berries evenly over the ice cream, spooning some of the juices over the top for extra flavor.

Garnish each serving with a mint leaf and a light sprinkle of lemon zest, if using.
