Make simple orange syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Add the orange zest. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar fully dissolves (about 3–4 minutes). Do not boil vigorously—just maintain a simmer so the zest infuses into the syrup for 4–5 minutes.

Remove the pan from heat and stir in 3 tablespoons freshly squeezed orange juice, 1 teaspoon citric acid, and 1 tablespoon light corn syrup if using. Cover and let steep for 15 minutes to build orange flavor. Strain the syrup through a fine-mesh sieve or cheesecloth to remove zest solids, pressing to extract liquid. Discard solids and return the clear syrup to a clean container. Chill the syrup in the refrigerator until cold (about 30 minutes).

Once the syrup is cool, stir in 1 teaspoon orange extract and 1 teaspoon vanilla extract to round out the aroma and mimick the commercial Fanta profile. If you want deeper orange character, add 1 teaspoon marmalade or orange jam and whisk until fully incorporated.

If a brighter orange color is desired, add a small drop (up to 1 teaspoon) of orange food coloring and mix thoroughly until evenly colored.

Taste the syrup and adjust acidity or sweetness: add up to 1/2 teaspoon more citric acid if it needs more tang, or up to 2 tablespoons more sugar dissolved in a little warm water if it needs sweetness. Chill again if you warmed it during adjustments.

For each serving (about 1 cup finished), fill a tall glass with 1/4 cup chilled syrup and ice as desired (adjust syrup amount to taste — 1/4 cup yields a bold flavor; reduce to 2–3 tablespoons for a lighter soda).

Slowly pour 1 cup (240 ml) cold carbonated water over the syrup and ice to preserve carbonation. Stir gently once with a bar spoon to combine. Taste and adjust: add more syrup for sweeter/stronger, or a squeeze of fresh orange for brightness.
