    Bring water to a boil

    Pour 1 liter of water into a medium pot. Add 1 tablespoon coarse sea salt and bring to a rolling boil over high heat.

    Cook edamame

    Add 1 cup of fresh or frozen edamame (in pod) to the boiling water. Return to a boil, then cook for 3–5 minutes for fresh pods or 4–6 minutes for frozen, until pods are bright green and beans inside are tender but still slightly firm.

    Drain and shock

    Immediately drain the edamame in a colander and, if desired, rinse briefly under cold running water or transfer to an ice bath to stop cooking and preserve color. Shake to remove excess water.

Finishing

    While still slightly warm, transfer the drained edamame to a serving bowl. Sprinkle about 1 teaspoon coarse sea salt over the pods and toss to distribute. If using, drizzle 1/2 teaspoon toasted sesame oil, squeeze juice from up to 1/2 lemon (to taste), and sprinkle 1/4 teaspoon chili flakes. Toss gently to coat.

    Serve warm or chilled

    Serve immediately warm or let cool and serve chilled. To eat, pop the beans from the pods into your mouth and discard the shells.
