Chicken and Marinade

    Prepare and marinate

    Pat the chicken pieces dry with paper towels. In a large bowl combine yogurt, minced garlic, grated ginger, lemongrass paste, soy sauce, harissa (or chili paste), smoked paprika, ground cumin, salt, black pepper and 2 tablespoons vegetable oil. Mix until smooth. Add the chicken and coat thoroughly. Cover and refrigerate for at least 1 hour, preferably 4 hours or overnight for best flavor.

Cook Chicken

    Roast or pan-sear then finish

    Option A — Roast: Preheat oven to 200°C / 400°F. Arrange marinated chicken skin-side up on a rimmed baking sheet or in a roasting pan lined with foil. Roast 30–40 minutes until internal temperature reaches 74°C (165°F) and skin is deep golden. Option B — Pan-sear + oven: Heat 1–2 tablespoons vegetable oil in an ovenproof skillet over medium-high heat. Sear chicken, skin-side down, 4–5 minutes until golden. Flip and sear 2 minutes. Transfer skillet to preheated oven (200°C / 400°F) and roast 15–20 minutes until cooked through. Remove chicken and set aside, reserving pan juices.

    Sauté aromatics

    In a large sauté pan or the skillet used for the chicken, add 1 tablespoon butter and a splash (about 1 tbs) oil if pan is dry, then heat over medium. Add chopped onion and cook 4–5 minutes until translucent. Add sliced red bell pepper and cook 3–4 minutes until softened.

    Build the sauce

    Stir in tomato paste and cook 1 minute to remove raw taste. Add crushed tomatoes, chicken stock, honey, rice vinegar (or lime juice), and 1 tablespoon soy sauce from the sauce ingredients. Scrape any browned bits from the pan (these add flavor). Bring to a gentle simmer and cook 8–10 minutes to reduce slightly.

    Adjust thickness

    If the sauce is too thin, mix 1 teaspoon cornstarch with 1 tablespoon water to make a slurry and whisk into the simmering sauce. Cook 1–2 minutes until it thickens.

    Finish the sauce

    Taste and adjust seasoning — add additional salt, pepper, honey or lime juice to balance sweet, salty and tangy flavors. Stir in the remaining 1 tablespoon butter for gloss and richness, then fold in chopped cilantro/parsley and sliced green onions, reserving a little for garnish.

Combine & Serve

    Return the cooked chicken to the pan with the sauce, spooning sauce over the pieces to coat. Simmer together 3–5 minutes so the chicken absorbs sauce flavors and everything is hot. For extra crispness, you can place the sauced chicken briefly under a hot broiler (1–2 minutes) but watch so it doesn't burn.

    Plate: Serve the Cluckington The Conqueror chicken over cooked rice, noodles, or alongside chips. Spoon extra sauce over the chicken and starch. Garnish with remaining chopped herbs, sliced green onions, a squeeze of lime, and a sprinkle of sesame seeds if using.
