Prepare Oysters

Clean

Rinse the oysters under cold running water and scrub the shells with a stiff brush to remove grit, barnacles, and debris. Discard any oysters with cracked shells or an off odor.

Chill bed

Spread the crushed ice evenly over the serving platter or tray to create a stable bed that will hold oysters level and keep them cold.

Shuck

Place a folded thick kitchen towel on the work surface. Hold the oyster cup-side down in the towel or wear a cut-resistant glove. Insert the tip of an oyster knife into the hinge (the pointed end). Twist the knife gently until the hinge pops. Run the blade along the top shell to cut the adductor muscle and open the oyster. Remove and discard the top shell. Slide the knife under the oyster meat to detach it from the bottom shell, keeping the oyster level to retain its liquor (natural juices). Repeat for all oysters.

Inspect & arrange

Check each oyster for shell fragments; remove any grit. Place each half shell with the oyster on the chilled ice bed so the oysters sit level. Keep oysters cold until serving.

Mignonette

In a small bowl combine the red wine vinegar, minced shallot, freshly ground black pepper, sea salt, and sugar (if using). Stir to dissolve the salt and sugar. Taste and adjust seasoning — it should be bright and slightly sharp. Refrigerate until ready to serve. Mignonette can be made up to 1 day ahead; stir before serving.

Cocktail Sauce

In a separate bowl combine ketchup, prepared horseradish, lemon juice, Worcestershire sauce, and hot sauce (if using). Stir until evenly mixed. Taste and adjust horseradish or lemon for heat and brightness. Refrigerate until serving.

Serve

Place small bowls of mignonette and cocktail sauce on the platter among the oysters. Arrange lemon wedges and parsley garnish around the edge. Serve immediately, instructing guests to squeeze a little lemon or spoon a small amount of mignonette or cocktail sauce over each oyster before eating.

Safety note: Consume raw oysters the same day they are shucked and kept properly chilled. Discard any oyster that smells off or has an unusual texture.
