Inspect and season

Rinse the crab claws under cold water and pat dry thoroughly with paper towels. Trim any excess shell shards if needed. Place claws in a bowl and season lightly with 1 tsp coarse salt and 1 tsp black pepper; toss to coat. Keep chilled until ready to batter.

Batter, Coating and Frying

Prepare batter

In a medium bowl, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1/2 tsp salt, 1/4 tsp ground white pepper and 1/2 tsp paprika. If using the egg, lightly beat the egg in a separate small bowl. Add the egg (if using) and then gradually whisk in 1 cup cold club soda until the batter is smooth and slightly thick but still pourable. Do not overmix; a few small lumps are fine. Keep batter cold in the refrigerator until ready to use.

Optional panko finish

Spread 1/2 cup panko breadcrumbs on a shallow plate. For an extra-crisp finish, dip battered claws quickly into the panko to lightly coat immediately before frying. This step is optional — the batter alone yields a crisp, light crust resembling tempura.

Heat oil

In a deep heavy pot or deep fryer, pour about 6 cups vegetable oil (enough for 2–3 inches depth). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small amount of batter into the oil—if it sizzles and browns within 30–45 seconds, the oil is ready.

Coat and fry claws

Working in small batches to avoid overcrowding, hold each seasoned crab claw by the shell and dip into the cold batter so claw is fully coated. If using panko, immediately press the battered claw into the panko to adhere a light coating. Gently lower the claw into the hot oil using tongs or a spider. Fry 2–3 minutes per batch or until golden and crisp and the internal meat is hot (avoid long frying which can dry the meat). Turn once if needed for even color. Frying time may vary slightly depending on claw size.

Drain

Using a slotted spoon or spider, transfer fried claws to a wire rack set over a sheet pan or to paper towels to drain. Sprinkle lightly with a pinch of salt while hot. Keep fried claws warm in a 200°F (95°C) oven on a rack while finishing remaining batches.

Fiddler's Dipping Sauce

Make sauce

In a small bowl, whisk together 1/2 cup mayonnaise, 1 tbsp creole or Dijon mustard, 2 tsp ketchup, 1 tsp prepared horseradish, 1/2 tsp hot sauce, 1 tsp fresh lemon juice, 1/2 tsp Worcestershire sauce, 1/4 tsp smoked or regular paprika, 1/4 tsp salt and 1/8 tsp freshly ground black pepper until smooth and well combined. Taste and adjust seasoning or heat to preference. Chill at least 10 minutes to let flavors meld.

Serve

Arrange fried crab claws on a platter with lemon wedges and the bowl of Fiddler's dipping sauce. Serve immediately while hot and crisp.
