Blue Crab Filling

Prep ingredients

Pat the lump blue crab meat dry with paper towels to remove excess moisture. Finely dice the onion and red pepper, mince the garlic, and chop the cilantro.

In a medium skillet over medium heat, melt 2 tablespoons butter until it sizzles but does not brown.

Add the diced onion and red bell pepper to the skillet and sauté 3–4 minutes, stirring occasionally, until softened and translucent.

Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to burn it.

Stir in the crab meat gently, folding it into the softened vegetables. Cook just until warmed through, about 1–2 minutes — do not over-stir to keep lumps intact.

Remove skillet from heat and transfer the crab-vegetable mixture to a bowl. Add mayonnaise, Dijon mustard, lime juice, chopped cilantro, Old Bay seasoning, salt, and pepper. Gently fold to combine, tasting and adjusting seasoning. Let mixture cool slightly so it holds together when assembling.

Quesadilla Assembly & Cooking

Warm a clean skillet or griddle over medium-low to medium heat. Lightly brush or melt a small amount of butter or olive oil in the pan (about 1 tsp per quesadilla) to prevent sticking and encourage browning.

Place one flour tortilla flat in the skillet. Sprinkle about 0.5 cup shredded cheddar evenly over half the tortilla, leaving a small border.

Spoon about 3 ounces (roughly 3/4 cup) of the blue crab mixture evenly on top of the cheese layer, distributing gently to avoid breaking up crab lumps. Top the crab with another 2 tablespoons of shredded cheddar to help seal the quesadilla.

Fold the empty half of the tortilla over the filled half to form a semicircle. Press gently with a spatula to compress slightly.

Cook 2–3 minutes per side, pressing occasionally, until the tortilla is golden brown and crisp and the cheese has melted. Use a wide spatula to carefully flip and cook the second side. If the outside is browning too quickly before the cheese melts, reduce heat to low and cover the skillet briefly (30–60 seconds) to encourage melting.

Transfer cooked quesadilla to a cutting board and let rest 1 minute. Slice into 3–4 wedges. Repeat with remaining tortillas and filling (you should have 3–4 quesadillas total depending on fill distribution).

Garnishes & Serving

Arrange diced tomatoes, shredded lettuce, salsa, and sour cream on a serving plate alongside the quesadilla wedges.

Place lime wedges on the plate (optional). Serve hot so the cheese is gooey and the crab filling is warm.

To eat: top quesadilla wedges with diced tomatoes and shredded lettuce and add a dollop of salsa or sour cream as desired.
