Preparing the Potatoes
Preheat your oven to 400°F (200°C). Wash the baby potatoes and cut them in half. Toss them with 2 tablespoons of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until golden and tender.
Grilling the Salmon
While the potatoes are roasting, heat a grill or grill pan over medium-high heat. Brush the salmon fillets with the remaining olive oil, and season with salt and pepper. Squeeze half of the lemon over the fillets. Grill the salmon for about 4-5 minutes on each side, or until it reaches your desired doneness.
Cooking the Spinach
In a large skillet, heat a small amount of olive oil over medium heat. Add the fresh spinach and sauté for about 3-4 minutes until wilted. Season with salt and pepper to taste.
