Key Lime Pie Ingredients
Method
Key Lime Pie Directions
Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until golden, then remove and let cool.
Make the Filling
In a large bowl, whisk together the egg yolks and the remaining 1/4 cup of granulated sugar until smooth. Gradually whisk in the sweetened condensed milk and key lime juice until fully combined.
Bake the Pie
Pour the filling into the cooled crust. Bake in the preheated oven for 15 minutes, then remove and let cool to room temperature. Refrigerate for at least 3 hours before serving.
Prepare the Raspberry Sauce
In a small saucepan over medium heat, combine 1 cup of fresh raspberries and 1/4 cup of sugar. Cook until the raspberries break down and the sauce thickens slightly, about 5-7 minutes. Remove from heat and strain through a fine mesh sieve if desired.
Serve
Slice the pie and serve topped with slivered almonds and a drizzle of fresh raspberry sauce.
