Prepare the Ingredients

Wash and chop the bok choy, cabbage, avocado, and watermelon radish. Slice the grilled chicken into strips.

Cook the Quinoa

Rinse 1/2 cup of quinoa and cook it in 1 cup of water or broth. Bring to a boil, then reduce heat and simmer for 15 minutes until fluffy. Toast lightly in a skillet if desired.

Mix the Salad

In a large bowl, combine the bok choy, cabbage, avocado, sliced chicken, snow peas, cilantro, watermelon radish, sesame seeds, and pickled ginger.

Add the Dressing

Drizzle the carrot ginger dressing over the salad and toss gently to combine.
