Place the Manzanilla bottle in the refrigerator for at least 30 minutes before serving. If short on time, fill a wine glass or small wine bucket with ice and water and nestle the bottle for 5–10 minutes until cool (45–55°F / 7–13°C).

Chill the bottle or glass

If serving by the glass, optionally rinse the wine glass with a little chilled Manzanilla (pour and discard) to cool and coat the bowl. Alternatively, chill the glass in the freezer for 10–15 minutes prior to serving.

Prepare the glass

Hold the bottle at the base and pour 6 fl oz (about 180 ml) of Bodegas Hidalgo La Gitana Manzanilla into each chilled white wine or small sherry glass. Fill to roughly one-third to one-half of the glass to allow aroma to concentrate.

Measure and pour

For a bright accent, express a lemon twist over the glass and drop it in, or serve with a single green olive on a toothpick. Both are traditional accompaniments that complement the briny, saline character of Manzanilla.

Garnish (optional)

Arrange the marcona almonds, thin slices of manchego, and serrano ham on a small plate. Serve alongside the chilled Manzanilla so guests can alternate sips with bites. The salty, nutty and savory flavors enhance the sherry's dryness and sea-salt notes.
