Bacon-onion jam

Cook bacon
In a medium skillet over medium heat, add the diced bacon. Cook until the bacon is browned and fat is rendered, about 8–10 minutes, stirring occasionally to ensure even browning.

Sauté onions and garlic
Using a slotted spoon, transfer most of the cooked bacon to a bowl leaving about 1–2 tablespoons of bacon fat in the skillet. Add the diced onion to the skillet and cook over medium-low heat until very soft and translucent, about 8–10 minutes. Add the minced garlic during the last 30–60 seconds and stir until fragrant.

Build the jam
Return the reserved bacon to the skillet with the softened onions. Stir in the brown sugar, apple cider vinegar, balsamic vinegar, maple syrup, Worcestershire sauce, smoked paprika and red pepper flakes (if using). Reduce heat to low and simmer gently, stirring occasionally, until thickened to a jam-like consistency, about 8–12 minutes. If the mixture becomes too dry, add up to 2 tablespoons of water to loosen. Taste and adjust seasoning.

Finish jam
When jam is glossy and thick enough to hold on a spoon, remove from heat and let cool slightly. The jam can be made ahead and refrigerated; rewarm gently before using.

Season patties
Pat the 10 oz Angus burger patty dry with paper towel. Season both sides with kosher salt and freshly ground black pepper.

Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 teaspoon neutral oil to coat. When shimmering, add the seasoned patty. Cook without moving until a deep brown crust forms, about 4–5 minutes. Flip and cook the second side about 4–6 minutes for medium (adjust to desired doneness).

Assemble burger
Place the bottom bun on a plate, add lettuce leaves, then the cheesy Angus patty. Spoon 2–3 tablespoons of warm bacon-onion jam over the cheese. Top with tomato slices, then the top bun. Serve immediately.
