Chill glass

Place a coupe or Nick & Nora glass (or an old-fashioned glass) in the freezer or fill with ice water to chill while you prepare the cocktail.

Mix ingredients

Add 2 oz Templeton Rye, 1 oz sweet vermouth, 2 dashes aromatic bitters, 1 dash orange bitters (if using), and 0.25 oz simple or Demerara syrup into a mixing glass.

Add ice and stir

Fill the mixing glass with large ice cubes. Stir gently but thoroughly for 30–45 seconds (about 20–30 full strokes) until well-chilled and slightly diluted — the glass should become frosty and the liquid cooled to near 0–2°C (32–36°F).

Prepare glass

If you chilled your serving glass with ice water, dump the ice water now. Strain the stirred cocktail through a Hawthorne or julep strainer into the chilled coupe or an up glass. If serving on the rocks, add 1 large ice cube to the serving glass and strain over it.

Garnish and serve

Express the oils of an orange peel over the drink by holding the peel skin-side down about 2–3 inches above the surface and giving it a firm squeeze to spray oils. Rub the peel briefly around the rim, then drop it into the cocktail as garnish. Serve immediately.
