Prepare quick pickle

Slice jalapeños into thin rounds (discard seeds for less heat if desired). In a small saucepan combine white vinegar, water, sugar, and kosher salt. Bring to a simmer over medium heat just until sugar and salt dissolve, about 1–2 minutes. Remove from heat, add tarragon leaves, then add jalapeño slices. Let sit at room temperature for 20–30 minutes to cool and develop flavor. Drain and finely chop enough to yield 2 tablespoons for the filling; reserve remaining pickled jalapeños for garnish.

Cook eggs

Place 12 large eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, cover, remove from heat, and let sit off-heat for 10–12 minutes for fully hard-cooked yolks. Immediately transfer eggs to an ice bath for 5–10 minutes to stop cooking and make peeling easier.

Peel and halve

Gently crack and peel the cooled eggs. Rinse to remove shell fragments. Slice each egg lengthwise and carefully remove yolks into a mixing bowl. Arrange egg white halves on a serving platter.

Make filling

Mash yolks with a fork until crumbly. Add mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, finely chopped tarragon pickled jalapeño (2 tablespoons), salt, black pepper, and smoked paprika. Mix until smooth and creamy — use a small whisk or an electric hand mixer on low for a silkier texture. Taste and adjust seasoning; add a touch more vinegar or mustard if you want brightness.

Pipe or spoon filling

Transfer the yolk mixture to a piping bag fitted with a star or round tip (or use a zip-top bag with a corner snipped). Pipe an even amount into each egg white half, or spoon the mixture decoratively. Set filled eggs on platter.

Make vinaigrette

In a small bowl or jar whisk together smoked tomato purée, sherry vinegar, honey, minced shallot, smoked salt, and black pepper. Slowly whisk in the olive oil until emulsified and slightly thickened. Taste and adjust balance — add a bit more honey for sweetness or more vinegar for acidity. If purée is thick, thin with 1–2 teaspoons water or additional olive oil to reach a loose-drizzle consistency.

Dress eggs lightly

Using a small spoon or a squeeze bottle, lightly drizzle the smoked tomato vinaigrette over the filled deviled eggs — a little goes a long way; aim for thin streaks across several eggs rather than pooling.

Crispy Prosciutto & Garnish

Crisp prosciutto

Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Lay prosciutto slices flat on the sheet (overlap slightly if needed). Lightly brush or mist with a teaspoon of neutral oil. Bake 8–10 minutes until crisp and edges are slightly brown. Remove and cool on a rack; once cool, break each slice into smaller shards.

Assemble and garnish

Scatter crispy prosciutto shards over the deviled eggs. Garnish each egg with a small piece of pickled jalapeño (from reserved pickles), a tiny tarragon leaf, and a few microgreens or chopped chives. Optionally sprinkle an extra pinch of smoked paprika and a few drops of the vinaigrette for visual contrast.
