Prepare wings

Pat the chicken wings dry with paper towels. If they are whole, cut at the joint to separate drumettes and flats and remove wing tips if desired.

In a large bowl, combine baking powder, salt, black pepper, garlic powder and onion powder. Toss the wings with the dry mixture until evenly coated. Add 1 tablespoon vegetable oil and toss again so the coating adheres.

Arrange wings on a wire rack set over a baking sheet (for air circulation). For best results refrigerate uncovered for 30–60 minutes to dry the skin; if short on time, proceed immediately.

Cooking the Wings

Preheat oven to 425°F (220°C). If using an air fryer, preheat to 400°F (200°C). Place wings on the wire rack/sheet in a single layer, skin side up with space between pieces.

Bake for 40–50 minutes, flipping once halfway through, until skin is deep golden and crisp and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). If using an air fryer, cook 20–25 minutes, shaking or flipping once at about 12 minutes, until crisp. Increase oven temperature to 450°F (230°C) for the last 5 minutes if you want extra-crispy skin.

Trendy Glaze (Sweet-Spicy-Smoky)

While the wings cook, make the glaze: in a small saucepan or microwave-safe bowl combine hot honey, sriracha, soy sauce, rice vinegar, light brown sugar, smoked paprika and lime juice. Warm gently over low heat until the sugar dissolves and the sauce is glossy, about 2–3 minutes. Stir frequently. If microwaving, heat in 20-second bursts and stir.

Taste and adjust: add more sriracha if you want more heat, more honey if you want sweeter, or a pinch of salt if needed. Keep warm until ready to toss.

Crunchy Toss & Garnish

When wings are done and piping hot, transfer them to a large mixing bowl. Pour the warm glaze over the wings and toss gently but thoroughly so each wing is evenly coated. Work quickly so glaze sticks but wings remain crisp.

Sprinkle toasted sesame seeds and sliced scallions over the glazed wings. Add microgreens or cilantro and cucumber ribbons as a fresh garnish. Serve immediately.

Dipping Sauce (Cooling Yogurt Ranch)

While wings cook, whisk together Greek yogurt, mayonnaise, lemon juice, dill, minced garlic, salt and pepper in a small bowl until smooth. Taste and adjust seasoning. Chill until ready to serve. Serve on the side for cooling contrast to the glazed wings.
