Combine mayonnaise and tomato elements

In a medium mixing bowl, add 1 cup mayonnaise, 1/2 cup tomato paste, and 1/4 cup ketchup. Whisk vigorously until fully blended and smooth, with no streaks of tomato paste remaining.

Add heat

Stir in 2 tablespoons Sriracha and 1 teaspoon hot sauce (if using). Mix until evenly incorporated so the sauce has a uniform pinkish-red color.

Aromatics & Seasoning

Add 1 teaspoon minced garlic, 1 teaspoon smoked paprika, 1/2 teaspoon onion powder, 1 tablespoon apple cider vinegar, 1 teaspoon honey (or sugar), 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper to the bowl.

Whisk thoroughly for 30–60 seconds, tasting as you go. Adjust salt, heat (more Sriracha) or sweetness to balance acidity from the tomato and vinegar. The honey helps round out heat and acidity; add up to another 1/2 teaspoon if sauce tastes sharp.

If the sauce is too thick for dipping, whisk in up to 1 tablespoon neutral oil or 1–2 tablespoons water, 1 teaspoon at a time, until you reach desired dipping consistency. The oil adds silkiness; water thins without changing flavor.

For a brighter finish, stir in 1 teaspoon fresh lime juice. Taste and correct final seasoning—add a pinch more salt or a few drops of hot sauce if needed.

Transfer sauce to a serving bowl and garnish with 1 tablespoon chopped fresh cilantro or chives if desired. Chill for at least 15 minutes to let flavors meld (recommended) or serve immediately.
