Prepare skewers
If using wooden skewers, soak them in cold water for 30 minutes to prevent burning. If using metal skewers, just set them aside.
Cut the pork
Trim excess fat from the pork shoulder and slice into 1 to 1 1/4-inch cubes. Aim for uniform pieces so they cook evenly. You should get about 24–28 pieces from 1 lb.
Make the marinade
In a medium bowl combine soy sauce, mirin, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and sliced scallions. Whisk until the sugar dissolves and the mixture is homogenous.
Season and marinate
Lightly season the pork cubes with kosher salt and black pepper and add them to the marinade. Toss to coat thoroughly. Cover and refrigerate for at least 30 minutes and up to 4 hours (longer will make the meat more flavored but can start to cure due to soy).
Cook the skewers
Place skewers on the hot grill or in the skillet. Cook 2–3 minutes on the first side without moving so a good sear forms, then rotate and cook another 2 minutes. Continue rotating every 1–2 minutes so all sides are browned and the internal temperature reaches 145°F (63°C). Total cook time should be 8–10 minutes depending on piece size and heat. Baste occasionally with any reserved marinade (do not use raw marinade unless you boil it first).
Rest
Remove skewers from heat and let them rest for 5 minutes to allow juices to redistribute.
Optional finishing & garnish
Transfer the rested skewers to a serving platter. Sprinkle toasted sesame seeds and chopped cilantro over the top. Serve with lime wedges and an optional drizzle of chili oil or a light sprinkle of chili flakes for heat.
