Beef and Marinade
Make the marinade
In a medium bowl combine 3 tbs olive oil, 3 tbs soy sauce, 1 tbs Worcestershire sauce, 1 tbs brown sugar, minced garlic, grated ginger, 1 tbs red wine or rice vinegar, 1 tsp black pepper, 3/4 tsp salt and 1/2 tsp chili flakes (if using). Whisk until sugar dissolves and ingredients are well blended.
Marinate the beef
Place the 1.5 lb cubed beef in a resealable plastic bag or shallow container. Pour the marinade over the beef and toss to coat thoroughly. Press out excess air, seal, and refrigerate for at least 1 hour and up to 4 hours (longer will tenderize but avoid more than 8 hours to prevent texture changes). Turn the bag once halfway through marinating.
Vegetables & Skewer Assembly
Prep vegetables
While beef marinates, prepare vegetables: cut bell peppers into 1-inch pieces, slice onion into wedges, trim mushroom stems, halve or leave cherry tomatoes whole, and slice zucchini into 1/2-inch rounds if using. Pat all pieces dry with paper towel to help them sear.
Soak skewers (if wooden)
If using wooden skewers, submerge them in water for at least 20–30 minutes to prevent burning. If using metal skewers, no soaking required.
Assemble skewers
Preheat grill or grill pan to medium-high (about 425°F / 220°C). Thread beef and vegetables onto skewers, leaving a little space between pieces for even cooking. Aim for 3–4 beef cubes per skewer with vegetables alternated—total 8–10 pieces per skewer depending on size. Reserve any remaining marinade for basting (do not use marinade that has touched raw beef unless you boil it first).
Cook and Finish
Grill the skewers
Oil the grill grates or brush each assembled skewer lightly with 1 tbs olive oil. Place skewers on preheated grill and cook 3–4 minutes per side, turning every 3–4 minutes, until beef reaches desired doneness (medium-rare 130–135°F, medium 135–145°F) and vegetables are charred at edges. Total cooking time about 10–12 minutes depending on cube size and heat. If using a grill pan, cook similarly and rotate to get even char.
Optional baste (safe)
If you want to baste with marinade, bring reserved marinade to a rolling boil in a small saucepan for at least 1–2 minutes to kill bacteria, then brush lightly over skewers during the last 2–3 minutes of cooking.
Rest and garnish
Transfer cooked skewers to a plate and let rest 5 minutes. Sprinkle with chopped parsley and sesame seeds (if using). Serve with lemon or lime wedges to squeeze over skewers.
