Dress tomato slices
Place tomato slices in a single layer on a plate. Drizzle with the extra-virgin olive oil and sprinkle evenly with half of the sea salt (about 1/2 tsp) and half of the black pepper (about 1/2 tsp). Let sit 1–2 minutes to marinate briefly.
Spread pesto
Spread the 3 tablespoons of basil pesto evenly over the cut surfaces of both the top and bottom halves of the warmed baguette. This ensures an even basil flavor and helps keep the sandwich moist.
Layer cheese and prosciutto
On the bottom half of the baguette, arrange the Fiore di latte slices in a single overlapping layer so cheese covers the bread. Layer the prosciutto slices over the mozzarella, slightly folding them to create texture and even coverage.
Add tomato and basil
Place the dressed tomato slices on top of the prosciutto in an even layer. Scatter the fresh basil leaves over the tomatoes (tuck some under slices for better distribution). If using, add the arugula on top of the basil for extra peppery flavor.
Season and finish
Sprinkle the remaining sea salt and black pepper over the tomato and basil layer to taste (use remaining ~1/2 tsp salt and ~1/2 tsp pepper). Close the sandwich with the top half of the baguette. Press gently to compact the layers.
Optional press or warm
If you prefer the mozzarella slightly softened and the sandwich warm, place the closed sandwich in a sandwich press or a skillet, weigh down with another heavy pan, and toast for 2–3 minutes per side over medium heat until warmed through and lightly golden. If serving cold, skip this step.
Slice and serve
Using a sharp bread knife, cut the sandwich into 2–4 portions depending on appetite. Serve immediately so the bread retains its crust and the flavors are fresh.
