Strawberry Shake

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

Carefully select ripe Chardonnay and Pinot Noir grapes from the vineyard. Ensure that the grapes are healthy and free from defects.

Step 1: Harvesting

Gently press the harvested grapes to extract the juice. Use a pneumatic press to avoid crushing the skins and seeds, which can impart unwanted bitterness.

Step 2: Pressing

Transfer the grape juice into fermentation tanks. Allow the juice to ferment at controlled temperatures (around 18-20°C) for 2-3 weeks until fermentation is complete. Monitor the fermentation closely.

Step 3: Fermentation

Blend the base wines from different grape varietals and vintages to achieve the desired flavor profile and balance.

Step 4: Blending

Add sugar and yeast to the blended wine. Bottle the wine and seal it with a crown cap to initiate secondary fermentation, which will create the champagne's characteristic bubbles.

Step 5: Secondary Fermentation

Age the bottles horizontally in a cool, dark cellar for at least 24 months to develop complex flavors and aromas.

Step 6: Aging

Gradually tilt and rotate the bottles to collect the sediment in the neck of the bottle. This process can take several weeks.

Step 7: Riddling

Remove the sediment by freezing the neck of the bottle and ejecting the frozen plug. Add liqueur d'expédition to adjust sweetness.

Step 8: Disgorgement

Seal the bottles with a cork and wire cage. Allow the champagne to rest for a few more months before release.

Step 9: Corking

Chill the champagne and serve it in a flute glass to enjoy its bright yellow hue and aromas of lychee and peach.
