Strawberry Shake

Pale lemon. Aromas of white flowers and marzipan, white peaches, light herbs. Bright and precise, with peppery notes and citrus zest.

Choose high-quality Chardonnay, Pinot Noir, and Pinot Meunier grapes. Ensure they are ripe and aromatic.

Selecting Grapes

Gently crush the selected grapes to extract the juice. Use a grape press or your hands, being careful not to crush the seeds.

Crushing Grapes

Separate the juice from the skins and seeds. Collect the juice in a clean fermentation vessel.

Juice Extraction

Allow the grape juice to ferment in a cool, dark place for about 2-3 weeks. Monitor temperature and sugar levels.

Initial Fermentation

After initial fermentation, add sugar and yeast to the fermented juice. Mix gently and let it rest.

Adding Sugar and Yeast

Once the secondary fermentation is complete, carefully transfer the champagne into a clean bottle. Leave some space at the top.

Bottling the Champagne

Cork the bottle securely to prevent any gas from escaping. Ensure the cork is well-fitted.

Store the bottled champagne in a cool, dark place for at least 12 months to develop complex flavors.
