Shuck the fresh oysters carefully and place them on a serving platter with ice to keep them chilled.

Prepare Oysters

In a small bowl, combine the goat cheese and honey. Mix until creamy and smooth. Optionally, add chopped fresh herbs for added flavor.

Slice the baguette into thin rounds, approximately 1/2 inch thick. Arrange on a baking sheet.

Preheat the oven to 375°F (190°C). Toast the baguette slices in the oven for about 5-7 minutes or until they are golden brown and crispy.

Before serving, chill the Billecart-Salmon, Brut Réserve in an ice bucket or refrigerator for at least 30 minutes.

Open the bottle of Billecart-Salmon, Brut Réserve. Pour the champagne into flutes or coupe glasses, filling each glass about two-thirds full.
